Greek Vinaigrette

1 shallot, diced
1/2 cup fresh lemon juice
1/4 cup feta cheese, crumbled
1/2 teaspoon dried oregano
1 teaspoon salt
Freshly ground pepper
1 1/2 cups extra-virgin olive oil

Put the shallot into the bowl of a food processor and pulse until well chopped. Add the lemon juice, feta, oregano, salt and pepper and pulse again to combine. With the processor running, add the oil in a steady stream. Pour into a small pitcher and set aside.

Sweetnicks' Notes: Very delicious and easy to make. For the salad, we used chopped romaine lettuce and added sliced red onions, black olives, and feta cheese on top. Originally made and reviewed here.
