Toasted Oat and Raisin Cookies

(includes some Sweetnicks modifications)
2-1/2 cup regular oats (toasted, optional)
3/4 cup vegetable shortening
3/4 cup packed dark brown sugar
3/4 cup sugar
2 eggs
1 teaspoon vanilla extract
1-1/2 cups all purpose or whole wheat flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
2 teaspoons cinnamon
1 teaspoon ground allspice
1-1/2 cups dark raisins

Preheat oven to 350 and move rack to center of oven. In a mixing bowl, cream the shortening until it is soft. Add the sugars, beating until fluffy. Add eggs and vanilla, flour, baking soda, baking powder, salt, cinnamon and allspice. Combine well. Stir in the oats (cooled, if toasted) and raisins). Mix well. Drop by tablespoons on greased baking sheets. Bake for about 15 minutes. Makes about 3 dozen.
